The two in my experience are about the same with two caveats. Caveat 1, by default the Sun kernel is set to core on the tinniest of hardware failures. Turn this behavior off right away if you need impressive uptime. Caveat 2, Linux needs good hardware to compete with Sparc based systems. Buy Compaq(HP) servers and you will have little to complain about.
I prefer the way suns handles drivers. Auto loads and unloads drivers automatically....etc....etc I prefer GNU-Linux user land (Default bash, apt-get/rpm, Gnu, locate, commands with the -h option...etc....etc.) At the and of the day I would choose Linux over Solaris, because you spend more time in user land then screwing with drivers. But if OpenSolaris ever gets a real following I would switch in a heartbeat. P.S. ZFS does rock.
