With iBank there is the notion of 'Smart Import Rules' where you can assign category (bucket) based on any of the fields of the transaction (memo, transaction type, payee) except amount and check number. You can create exact or sub string matches, and match if Any or All criteria of the rule match.
iBank has been pretty unstable since 3 came out, looking for something better but I would miss this too much.
