Number 1, stop doing brick level backups, they are a waste of time, money, and bandwidth. Their is no need to backup each mailbox seperately, this is what is taking so long. You can configure your exchange server, if that's what you have, to let your users recover deleted email up to a pre-determined set of time, the average is 30 days.

We had two rules. 1: Generally speaking you have to multiplex two or more backup-streams (data from different systems) to get the desired tape performance 2: To recover a multiplexed data stream will obwiously take more time comparing to a non multiplexed data stream. 3: You can demultiplex the tape by copying different streams to differents tapes, This kost off-line time but will save time in case of disaster recovery.
