WINS is most definitely not a requirement for AD to be properly running. However, your DC must be properly running DNS for internal name resolution. If you choose to have your FreeBSD box provide external resolution, that is fine and well, you can just create a forwarder on the DC. You also didn't answer the question of whether this was an XP Pro or XP home box you were trying to add. Typically when I add a box, on the popup for adding the computer to the domain, I use domain\username for the username, although username@domain should work as well. How is your DNS configured on your domain controller? Is your test AD DC also running DHCP? If not, where are your test computers getting their IP's from, and what are the DNS settings on the clients? If so, then what are the DNS settings configured as? Have you tried configuring the client with a static IP and putting the ip of your dc into the dns settings of the client to see if it helps? Just a couple of thoughts . . . More info, please!
