We run VMware here and for every VMware host we have a Windows Data Center license.
Watching the new HyperV 3 features and our environment requirements and VMware's license changes, we'll be checking into it more next year as the Server software gets into beta and release. We are in the beginnings of our 3 year agreement with VMware so no immediate cost change for us.
