Right now...not a damn thing, I need to figure out how to make it find the 
non-domain joined 9or heck, domain joined for that matter) Mac's so I can start 
going "Big Brother" on them.

Are you running mac os Server or client? any major issues with running Server

You got the server, so no DVD drive. Did you get it with a second HD? If not, 
you may want to consider adding one. (There is space in there for a second 2.5" 
drive.
