UPM is pretty good considering it is bundled with XenApp - its easy to deploy and cuts out a lot of the roaming profile ugliness. But if you want precision control of user state virtualization, AppSense EM is very good. The latest version even allows users a self-service portal to restore their profiles to a previous working state, which is a very handy service to offer. I have a XenApp 6.5 farm that has issues with MS Word 2010. For some reason, for many users, it keeps prompting them with "Word failed to start correctly last time...do you want to start word in safe mode?" Of course they can't start Word in safe mode, this being Terminal Server/XenApp. Any solutions or suggestions for this issue? This if Office 2010 Standard and the other Office apps run fine.
