Microsoft has said that it will support Exchange 2007 running in a Hyper-V guest environment. All roles except Unified Messaging.

We don't use Vmware ESX for any databases above like 3-5GB, we usually put them on shared SQL systems, that are hardware and dedicated for SQL only. Just my recommendation. Z Edward E.
