In my experience VMWare Server is a DOG (performance-wise) compared to ESX (now vSphere). I haven't used ESXi, so I can't comment on that. I would definitely try on vSphere or ESXi if your intended deployment can be changed to either of those options. If cost is a concern, have you tried Hyper-v or Virtual Server 2005 instead of VMWare Server? There is a tool out there to add a GUI front end to manage VS 2005.
