You can usually just a single graphics card that supports two displays.
Often there will be one DVI connection and an old 15 pin D connector
for a CRT. Motherboards only have one AGP slot so your limited there,
however I think with PCI Express you can have multiple (high speed)
graphics cards - someone who has a clue about this stuff is welcome to
correct me however.

While I run dual monitors (as mentioned) I would much rather
run 1 large monitor than 2 smaller monitors. Then your head
does have to move around.
