You would use an instrumentation grade op Amp which would be better than
audio.

ADCs need a buffer amp and an sample and hold.  There is also the issue
of high frequency noise (that could be aliased) that might need to be filtered out.

Some premium, la-dee-da hand-selected FET? I'm thinking it would be
nice if the same PCB could be hooked up to either balanced or
unbalanced inputs.

This isn't a problem, just change the resistors on the op amp.
