At a guess, this looks like the sort of discussion that you perhaps
should be having with sales folks from the various vendors you're
talking about, rather than on this list.

I don't know what Sun server you're looking at, but I just looked at
the Xserve on the web.  It looks like a fairly regular Xeon-based box.
I'd expect it to run Solaris just fine, just like the Mac Pro does,
but it's not currently on the HCL, which means it hasn't been tested
yet, or those who've tested it haven't submitted their results for
inclusion in the HCL.

For grins, I went to apple.com and sun.com and priced out an Apple
Xserve and a Sun Fire X4150.  Both are 1U Intel Xeon-based systems.
After configuring them similarly for a fairly base configuration, I
got a total of $4399 from Apple, and $4961 from Sun ... and those are
the list prices rather than the discounted ones.  I didn't see the
large gap you do.

Comparing platform options for marketing purposes isn't really my day
job, so it's possible that I missed a difference or two in there.
It's also not the purpose of this list, so I think you should probably
talk to the vendors involved, rather than the community that supports
the source code.  :-/
