Yes, Android 6.0 is fine. The specs should be more than enough to run OsmAnd smoothly. The primary reason to go for a higher version of Android is that you'll have a better chance of receiving security updates for the device. That probably matters most if / when you want to use that phone as your primary communicatio n device as well. Spec-wise you should be fine however. 32GB of internal storage will probably leave you with ~23GB of usable storage for maps for instance. Depending on (the number) of countries you want to visit and whether you have access to s broadband internet connection every now and then, you will do fine. You could always switch to an added sdcard if you think internal storage is not sufficient. Map size depends on many factors however; some have more details than others. To give you an example, Belgium and the Netherlands are somewhat comparable in 'real' size, but the map size on disk for The Netherlands is 2,5x that of Belgium (1600MB vs 600MB). Most countries are divided into 'chunks' (by province or district or something) as separate downloads of a couple of 100MB's '; so if you plan your route carefully, 23GB's will get you pretty far.
