Don't get me wrong, Mike, I'm a hard-core foodie and I truly enjoyed well-prepared eggplant and eggplant parmesan, but my mother's version is inedible. Over-cooked or under-cooked, I don't recall, but it was horrible. None of us liked the way she did it, but she's a stubborn ol' broad and wouldn't change her recipe.
