There is an iTunes patch 1.1.3 for OS 8.6 available at:

It has a very well written  and illustrated "how to" document located in the 
"iTunes 8 patch help" folder which will take you step by step through the 
installation of iTunes on MacOS 8.6

To summarize:
1. Run the patch on the iTunes installer.
2. Create a folder called "Documents" on the root level of your hard drive 
(unless one exists).
3. Install iTunes with the installer you just patched.
4. Run the patch again this time on the newly installed iTunes application 
and extension.
5. Restart

You must have  QuickTime 4.x or newer installed for iTunes to work. At least 
I could not get one of my 6100's running OS 8.6 and QT 3.x to work until 
upgraded QT to v5.02. And be sure you have all the required extensions turned 
on.

I have iTunes (patched) installed on a 7300/200 604e and on two 6100's and a 
7500 with G-3 upgrades. All are running MacOS 8.6 on 10baseT Ethernet. It is 
working problem free with one of the 6100's using an old external 5200 rpm 
SCSI I full height drive as the server.

Note: to run on a network you will need to allocate more memory to the iTunes 
Application to prevent skips in the music.
