The stock fan in the 7*** series and I believe also
in the 8*** series has a feature that automatically
increases the speed of the fan as the internal temperature
rises and subsequently lowers the speed as the temperature
falls again. That could explain why the fan appears to be
labouring on warmer days. If the processor temperature is
27 C, I would consider that excellent and wouldn't be
concerned about overheating.
