If you are using the word 'Sort' in the way it is traditionally used in computer 
science, that is, arranging a list in some order or other, then:

If you want to sort a particular mailbox listing by, say, Subject, you click on the 
word 'Subject' at the top of the mailbox. This works for almost any column header.

If you just want to gather together all the messages with a particular Subject, you 
hold down the Option key while clidking in the Subject column of any message with that 
Subject. This, too, works for other columns.

I'm basing this on 5.0.1, but I have no doubt that these work in later versions of 
Eudora.

Presumably, you substite 'on' for 'off' if you want to subscribe.
