A lot depends on what you want to do. In my experience, Yellow Dog is (by far) the best Linux distribution for old world machines. Linux, however, is only the best choice if you want a user system (like a workstation or desktop machine) and lots of ease-of-use things like RPM installations. I highly recommend NetBSD for all other tasks (internet servers, programming, etc), and for more serious *nix users.
In any event, the later PCI PowerMacs (7x00/8x00/9x00) make superb *nix machines because of their upgradeability and reliability. Good luck with it! As for this being off-topic, let's not be so hasty. I think asking which distribution to use on a PCI PowerMac is perfectly on-topic.
