eBay or try Jeff Walter on the SuperMac list, he sometimes has them.

9.1 is the  way to go (the  9.0.4->9.1 upgrade is a free download.

I use an XLR8 ziff carrier with a G3/300 in my 8500, but the first and
foremost thing you want to  do with the  7200 is  either put a 75/76/8500
board in it or abandon it altogether and just buy a 7500. The  CPU upgrades
for the 7200 will cost you more than  a  7500 and the  upgrade for it.
