why 2 drives (dumb question, huh?)? would an 8600 be better than an 8500 in
the video department, as far as the built-in video is concerned?

Actually it can if you upgrade enough. An UW SCSI card and two fast disks
will do the job.
The software you need is JES Movie RAID.
