What's the difference between the PCI and the ZIF version? Is one better than the other? I also saw a G4 500Mhz for about the same amount. Is it better to get the G4?

If it is for a 7600 either one would be for a PCI slot. A ZIF to PCI adapter card would allow insertion of ZIF ( zero insertion force )
CPU chips of G3 - G4 type which can be bought new or used.
You might want to look for a nice G4 " Sawtooth " AGP video Power Mac. AGP power for display and a full speed system bus for the G4 chip is hard to beat. I have seen these on the swap list recently for very attractive prices. I suppose because more people are finding the G5 s to be affordable.
The PCI cards have also come down in price on the swap list. For the same reason I assume.
Your budget and sentiment will decide here.
