Built-in means the sound output hardware built into the motherboard. The only alternative would be a sound output PCI card.
If you want to switch from built-in speaker to the headphone hack or such just plug something in. If you are talking about the line out of say a 7500 / 7500 series then IIRC the line out is at a fixed level, unaffected by volume control. So just turn the volume off / mute it.
What model are you talking about?
PowerMac 8500. I've got something plugged in but I'm not hearing anything. Could it be because it's a mono plug (as opposed to the common stereo plugs)? Mono plugs work in stereo jacks; I've done it numerous times before.
Are you talking about the red and white RCA connectors or the mini-jack headphone output? A single RCA into either the red or white should work. The RCA outputs are the ones operated independent of the volume control. The mini-jack is the headphone jack, it cuts out the speaker and it is controlled by the system volume control. A mono mini-plug will work there but it does short out one of the channels.
