About the same as a Canon EOS 3 I would estimate. In other words
quite quiet for a MD/AF camera.

I answered about the AF response in a previous message. No I
didn't get to try any other lens. I asked about third party
lenses and was told that if it worked on a ZX-1p it should work
on the MZ-S.

Yes the body can set the f-stop manually when the lens is on
"A". I got the impression that the on lens controls were only
there for legacy purposes.

The spec sheet says it is a shutter lock. I didn't try it
myself (seems like I checked out a lot less than I thought I did
while I had it in my hands), but I seem to remember from his
demonstration that it was more than that. I think it locks up
the exposure and focus until you turn it back off. That would
allow you to select your exposure and focus them lock them while
you recompose.
