Adobe RGB should be OK in 8 bit, but that's just a guess. I haven't done any comparisons myself so I don't know exactly where posterisation will become visible (the threshold of visibility will differ between screen and print). If you do the test, look most closely at greens and cyans as this is where the two colour spaces differ the most.
At the moment I'm still trying to decide which colour space I should work in, but since my originals are slides I can always re-scan if necessary :)
When I eventually buy a DSLR I will shoot Adobe RGB, but that's because I'll most likely be doing my own printing, and if not I can convert and optimise my files as necessary. Anyone who's letting their lab handle the printing should use sRGB.
