If the work allows a slow, deliberate shooting style the upright
cannister method is okay. My work is in a fast, don't-think-too-much
environment - I have 6 cannisters on each strap and am wearing from 2 to
4 straps and I don't want to keep up with which cannister has a used or
unused roll. After I unload a roll from a cannister, the top for that
cannister goes into a dedicated pocket; so, when I need another roll, by
feel I can tell which cannister does or does not have film. My
cannister tops are coded to tell me what type of film the cannister
contains: smooth for B&W, a hole for chrome.
As for "other bits" I don't utilize cannisters for carrying that, so I'm
sure you know best. I use army surplus AR-15 magazine pouches for my
"other bits". (They're great for holding a Leica's bottom cover when on
the run and changing film.)
The old adage applies, "different strokes for different folks". I'm
trying to be helpful, and if my suggestion doesn't work for you I sure
hope you find a way that does.

Sure, but then it becomes a PITA to insert the used roll of film, or to use
the canister to carry other bits when doing it as you describe.
