I think that even if a relatively economical sensor design such as the one found in the Pentax DSLRs were re-engineered sans-colour filters economies of scale would prevent it being a consumer item as such. Costs would be very high to produce the relatively limited numbers they would sell. It would be fun though of but of limited use and appeal.
