When I did such things I turned off both the winder and flash to record the ceremony, and wished I had a Leica so I could get rid of the mirror clunk too. However, I don't remember being hired by anyone because I did that, so it probably bothers the B&G less than it bothers photographers.

Based on one experience as a bride and one as a wedding photographer, loudly tripping over a thick power cord during the ceremony, it seems the B&G notice very little that happens around them during the wedding. On the other hand, guests and officiants can be quite observant.
