Thanks for all the info, I knew this list would be helpful!

This is what I've been able to pull from the reply's so far...

The 50 should give plenty of range (I will be sitting at the edge
of the mat)

The 50 should provide enough light without using a flash (I've
been at the gym before and it's not pitch black)

ISO over 800 not necessarily a benefit (thanks Larry)

ISO range up to 800 if I can keep f4, 1/125 (thanks Paul)

Things I'll have with me include the 50, the 28-80 and 70-200 in
case, the flash, grey card, extra memory and batteries

A couple of questions coming to the surface...

RAW v. JPEG - I know the differences and have shot both. My
concern is quick turnaround for these shots. If I need to
post-process RAW into JPEG, I'm adding time (although how much of a
time difference is there between the RAW converter and adjustments in
PS)

RAW v. JPEG - not sure of the write time difference with the
K100D, is it even relative?

Higher ISO = more 'grain'. Does anyone have a preferred cleanup
tool? I've used Neat Image in the past, but haven't in a long while.
I use PS Elements 5 to do my work.

Using the grey card, how do I go back to reset the white balance
(or should I just use it to manually set the white on camera)?
