Are you talking about stills shooting, or video?

The point of shooting green / blue screen is that it would take forever
to individually 'photoshop' each frame of a moving image where a new
background is to be added.

If stills, I personally can't see an advantage to shooting with a green
or blue screen background, and may even be detrimental in terms of
colour interference. If I was shooting stills of a subject I knew I was
going to place on a different background in post-processing, I would
shoot against a white, or light-coloured backdrop.

If shooting video or film, you want green or blue screen (depending upon
process used).
