Are you talking about stills shooting, or video?
The point of shooting green / blue screen is that it would take
forever
to individually 'photoshop' each frame of a moving image where a new
background is to be added.
If stills, I personally can't see an advantage to shooting with a
green
or blue screen background, and may even be detrimental in terms of
colour interference. If I was shooting stills of a subject I knew I
was
going to place on a different background in post-processing, I would
shoot against a white, or light-coloured backdrop.
If shooting video or film, you want green or blue screen (depending
upon
process used).
I've looked over the shoulder of a still photographer shooting green-
screen, but it was so much like shooting video he was probably using
the same equipment. The monitor already showed the background, which
would be changed from time to time. The model was superimposed into
it, which made positioning very easy. I assume the merged file was
what was saved to disk. But it may have been safer to save both the
merged and the green-screen shots separately. It was cool...
