Paul... Never happened to me. I suppose you're right though, a light leak could fog paper in that situation. As Shel mentioned, it's probably a good idea to have the area around the easel be a darker color, it's just that it's never been an issue with me.
I always cover my paper with a black card If I need to adjust the negative carrier or what have you when I have the paper already out and in the easel. my enlarger only leaks light with the negative stage open. Also, I rarely print with such long exposure times. I have a restored antique DeJur Versitle condensor head enlarger. even with this old thing I haven't fogged any paper, at least none I ever noticed.
