Don't know what method you used to set the file association. I suspect
the CS3 and CS5 executables have the same name and Windows is pointed
down the path to the CS3 file. If you didn't set the association the
following way, it's worth a try...

In Windows Explorer, right click a jpg file, then select "Open With..."
You will get a list of choices.
At the bottom of the list select "Choose default program".
Another box will open with another list of programs.
Select Bridge CS5 if it's there, otherwise you can browse to it and
select it.
Be sure to tick the box by "Always use this program to open this kind of
file".

That's how I went about changing the association from CS3 to CS5, but for some reason, it's still opening with CS3. Bridge CS3 and Bridge CS5 even have different Icons. CS3 has "Br" with white letters, while CS5 has "Br" with black letters.

I even double checked properties and the CS5 Icon points to bridge.exe in the "C:\Program Files\Adobe\Adobe Bridge CS5" directory, which has a creation date of 11/10/2010. If I actually double click that icon, Bridge CS5 opens.

I managed to force an association with CS5, by going into properties for the JPEG file, but it wouldn't open when I double clicked a JPEG icon or right click|Open.

The choice to "Always use this program to open this kind of file" is checked, but was greyed out. It also seems to want to default back to Bridge CS3 despite what I tell it I want it to do.

If I force an association with Bridge CS5, the JPEG file will not open the program if I double click, Right Click|Open or Right Click|Open with Bridge CS 5. Right Click|Open With Bridge CS3 will open Bridge CS3 to the folder where the JPEG file is located.

If I reset the association to Bridge CS3, double click, right click|Open and Right Click|Open With CS3 will open Bridge CS3 to the folder where the JPEG is located. But it still will not open Bridge CS5 when I Right Click|Open With Bridge CS5.

I can start Bridge CS5 by double clicking the Bridge CS5 icon or by double clicking the Bridge CS5 shortcut I created on the desktop. But I want to be able to double click a JPEG icon and have it open Bridge CS5. If I wanted it to open Bridge CS3, I wouldn't have spent the money to buy CS5.

I am starting to get pissed off at Adobe at this point.
