Don, you are pretty safe exhibiting or posting such shots in any
manner that you could consider to be "portfolio". The models were
retained by the organizers explicitly for workshop/classroom purposes
and they would have been clear on that purpose when hired.

But don't try to use these shots in any commercial manner. Don't
upload them to stock sites, etc. You need a signed model release for
that. (And for some sites, like Getty Images or iStockphoto, you need
to use their site-specific model release form.)

Some folks always get a signed model release to protect themselves. I
do that now myself and carry a bunch in my bag, as well as maintaining
an online version (Google Docs) that I can email to models. It means
that everyone involved is perfectly clear about the photographer's
rights to the images.

You could ask the workshop organizer directly to see what their take is on it.

Model releases is another one of those controversial topics that
always gets people worked up, so you may hear some other opinions. :-)
There are some good resources around, like the ASMP site. Google for
"when do i need to use a model release" and be amazed.
