Keep in mind that Cotty is talking about news video production. For
movies, etc. not only are the chirping birds and passing trucks in
stereo, they're added in post-production with stock recordings and
foley artists.
One of the great things about ubiquitous video is that there's bound to be a wealth of freely available information on how to do it well on a limited budget.

It's just mind-blowing that between my camera and my laptop, I have a set of tools at my disposal that can perform tasks that would have required a movie studio and the backing of investors within my lifetime. It's hard not to be intrigued by that.
