I have to admit, I am having much better luck getting good exposures
when I go full-manual with an M lens.

I don't quite nail it on the first try, but after two or three, the
histograms look much better. Sooner or later, it'll start clicking with me.

Now, it may be a bad idea to begin with, but I'm curious if it would be
possible to use the AF200T or AF200S on-camera while using my Promaster
as a slave?

With any Pentax DSLR from the K10D onwards, the auto-flash functions are
not going to work. The AF200S is going to always fire at full power. You
might be able to use the scale on the back to figure out a usable
aperture, but it would likely take way too much trial & *ERROR*

The AF200T has a switch that allows you to choose Full, 1/2, 1/4 or 1/8
power. That might work a little better.

You'd probably be better off mounting the AF200T and/or AF200S on a
slave shoe as an off camera fill and using the Promaster on the camera.

I don't know what camera you're using. K10D, K20D, K7, K5 all have an
X-sync (PC) socket so you can have a flash mounted on the hot shoe and
still use one of the radio triggers.

K-x & K-r don't have the X-sync, so you'd have to mount the
AF200S/AF200T on optical slaves to trigger them.
