IIRC, 'interpreter' means the Ruby runtime. E.g., /usr/bin/ruby. Sorry, don't have Eclipse handy at the moment.
You could also check out this site for general OS X + Rails. (I think the SSL patch info is outdated.): http://brainspl.at/pages/rails_stack Honestly, the Eclipse features that make it an invaluable Java IDE aren't really applicable to Ruby. Partly because Ruby is a dynamic language, partly because Ruby is more concise than Java. I use BBEdit/TextWrangler + Terminal myself. But if you are used to Eclipse, it's a nice easy transition.
