Hi Madelaine A sensor with a remote probe and transmitter would be the best so you can see the temperature during the complete cycle. As Joel says, the idea is to get the probe into the ‘centre’ of a wrapped package/object where possible to ensure the core temperature is reached for the minimum period. We use a radio telemetry system for all our environmental monitoring and have sensors for the freezers to ensure the cycle is completed adie
