We went ahead and bought the Onset MX2303. We did a test today and I wasn’t
able to get a Bluetooth signal from inside a freezer truck (it uses the HOBO
app to download the data), but I was able to run the probe cords through a
small gap in the gaskets around the doors and with the transmitter outside of
the freezer it is now working very well! Thank you all for your recommendations!

I don't know how it would work in a truck but the freezer does have a metal

I use the Onset Hobo MX2304 and have found it easy to use.

I do not currently use it with the compatible Onset MXGateway which pulls the
data to the cloud. But via Bluetooth I am able to receive the data without
opening the freezer or the packaging.

Hi Madelaine
A sensor with a remote probe and transmitter would be the best so you can see
the temperature during the complete cycle.
As Joel says, the idea is to get the probe into the ‘centre’ of a wrapped
package/object where possible to ensure the core temperature is reached for the
minimum period.
We use a radio telemetry system for all our environmental monitoring and have
sensors for the freezers to ensure the cycle is completed
