Thank you so much for your replies! After I received your emails yesterday Joel 
and Ozge, I reached out to Onset to inquire about the HOBO U23 and they also 
suggested that I should look at the HOBO MX2300, which is a remote probe and 
transmitter just as you recommended Adie!

Hi Madelaine

A sensor with a remote probe and transmitter would be the best so you can see 
the temperature during the complete cycle.

As Joel says, the idea is to get the probe into the ‘centre’ of a wrapped 
package/object where possible to ensure the core temperature is reached for the 
minimum period.

We use a radio telemetry system for all our environmental monitoring and have 
sensors for the freezers to ensure the cycle is completed

I was curious if anyone has a favorite thermometer/temperature probe for use 
during freezing treatments? Particularly for monitoring interior temperatures
