After I received your emails yesterday Joel and Ozge, I reached out to Onset to inquire about the HOBO U23 and they also suggested that I should look at the HOBO MX2300, which is a remote probe and transmitter just as you recommended Adie!

As Joel says, the idea is to get the probe into the ‘centre’ of a wrapped package/object where possible to ensure the core temperature is reached for the minimum period.
