I did have it running on a P3-600mhz with 512MB laptop, serving 8 heavy users and 4 normal users. I only had slight issues when users first logon via the Web UI. Most users were using either Thunderbird or Outlook - no issues there. There were in the region of 1000-1500 e-mails flowing into the server, the biggest bottleneck was my adsl line and not the server. As with most recommended specs they are just guidelines, it ultimately depends on how/what you plan to use it.
