I didn't quite meet the "this afternoon" challenge but I succeeded at
the 11th hour (and a bit).
Our diagnosis was correct and the fix is to create an lts.conf file to
set the default colour depth to 24, then it "just works" here too.
Specifically I created the file /var/lib/tftpboot/ltsp/i386/lts.conf
with contents -

# Global defaults for all clients
# if you refer to the local server, just use the
# "server" keyword as value
# see lts_parameters.txt for valid values
################
[default]
X_COLOR_DEPTH=24
as learned from
http://doc.ubuntu.com/edubuntu/edubuntu/handbook/C/customizing-thin-client.html
you can then change the value from 24 to 32 and make it fail again. No
image rebuild is required this way.
Screen res is the native 1280x1024 of the attached flat panel.
The sounds also works, as does a USB memory stick !
