Freedesktop.org's classification implies that they'd put it in
Office/Viewer.  Ubuntu puts it in "Apps/Viewers"
All 'desktop' applications should go under Applications. Since the subcategories match the submenus, it should probably go in Accessories or maybe Office, but I think viewers are Accessories.

Uhh, check that. Evince is under Office so that is where Acrobat should go too.
