For non programming students you probably want to focus on Desktop apps such as OpenOffice, Firefox, Thunderbird, GIMP, Wine For those learning to write web apps; you might want to focus on Apache, PHP. For those learning to program you might want to focus on Linux software development tools such as : version control tools (Subversion), Doxygen, gcc, gdb, Database (PostgreSQL, MySQL).
