Yes... have done that in the past on an AMD64 machine with 1Gb of RAM. The experience of using as a desktop it as is a different matter. Some crashing of the video card drivers I have noticed. It all depends on the devices that you have and the custom/quality of drivers that comes with it.
It reminds me of BeOS hunting for drivers, which half the time are of alpha/beta quality.
