BTW, if you find yourself in this situation, you can get out of it by
using one of the boot options:

https://help.ubuntu.com/community/BootOptions#Initrd%20break%20points

In this particular case, break=bottom works well as it mounts the root
partition, allowing one to fix the /etc/fstab before continuing the
boot process.
