galen, I assume the default CUPS assigns when the printer driver is selected. For the color lj: Description: HP Color LaserJet 2550L Location: Office Driver: HP Color LaserJet 2550 Series Postscript (recommended) (color, 2-sided printing) Connection: socket://192.168.55.194:9100 Defaults: job-sheets=none, none media=na_letter_8.5x11in sides=one-sided For the LJ5: Description: Double-side Location: Office Driver: HP LaserJet 5 - CUPS+Gutenprint v5.2.4 (grayscale, 2-sided printing) Connection: socket://192.168.55.192:9100 Defaults: job-sheets=none, none media=na_letter_8.5x11in sides=two-sided-long-edge So, the monochrome is using CUPS+Gutenprint and the color doesn't know from Gutenprint. In the list of potential drivers, the selected one is the only driver specifically referencing the 2550.
