That depends - where do you save your data?
I would backup following directories:
Documents
.config
+ Virtual machines if you have any
+ Emails
+ Music
+ Videos
+ Downloads - if you hoard valuable data in there

In current Ubuntu - lots of stuff is installed as snap and do not store
config files in .config directory. So, bear that in mind.

Also some older applications do not use .config - you may want to check
your home for other . files if you care to keep their config.

Check your email client - if you use one - where it stores data to back
that up.

In this case, it pays to be organized,
