I would be really surprised if players could tell Spotify not to include a track in the stats.
Some streaming services indeed expect the player (or the controlling software like LMS) to report when a track has been listened to. Without that reporting they wouldn't have any means to calculate listening hours. But Spotify is different, in that it's not the same http and file based streaming like all the others.
