What file format are you playing and on what hardware is your server
running?

Are you syncing iPeng with another player?

This sounds a bit like the server needs to transcode to me.

Which iPeng version do you use? The "Play single tracks" option is no
longer present in iPeng and even if it was, it would have no effect if
your server is set to play whole albums. "Play single tracks" was only
there because by default iPeng was always playing the whole album, no
matter what your server was set to (playing single tracks was the
default with old server versions) and this option was needed to make
sure you can still play single tracks in case you really want to.
Since now for quite a while the default in Logitech's server has been
to play whole albums, too, I assume everybody who's set the server to
play single tracks probably really wants it that way so iPeng now just
uses the server setting.
