It's all clear to me now. I had in my head that the file has to always be encoded to mp3 when using remote playback, so I was a little confused with the bit rate limiting option.
Anyway with bit rate limiting turned off the files being streamed is flac. This will help the server as no encoding but uses up a fair bit of bandwidth as it's flac. With bit rate limiting turned on the server has to work a little bit to encode the file to mp3 (hence my stuttering experience) but less bandwidth as it's a smaller file. There's always a compromise hey. I am going to experiment with VPN tonight instead of port forwarding as you say it's safer. Any limitations here please?
